OBJECTIVE
- Design and develop a complete turn-key catering division from the ground up; to include drop-off, pick-up and basket orders
DELIVERABLES
- Research and recipe development of new catering menu based on current existing prepared foods counter offerings
- Food costing and COGS documentation
- Retail pricing and packaging recommendations based on COGS
- Packaging research and development (proprietary and unique to McEwan)
- Develop a work-flow plan and standard operating procedures from order-taking to delivery (order-taking, payment processing and procedures; prep and assembly of orders; delivery system recommendations and procedures)
- Develop a kitchen operations and instruction manual; outlining standard operating procedures, kitchen prep, recipe and assembly instructions
- Staff training of standard operating procedures
- Marketing plan to include all seasonal events, promote custom parties and establish first point of contact with a follow up call by catering coordinators
- Photography
- Brochure and in-store signage design, print and direct mail distribution
RESULTS
- McEwan Catering has become one of the most successful catering companies in Toronto
- We developed a new product: our division WoodTrays.com – an eco-friendly, biodegradable drop-off serving solution (originally unique to McEwan Catering and launched to the general public in 2009)
